A guy at work gave me a 24" lake trout. It's not filleted just gutted and head removed. Right now it is frozen, my question is, can I thaw it and then refreeze fish? I'd like to fillet it and cut it up into a couple pieces and then put it back in the freezer. Just wondering if you can thaw and then refreeze fish or will it ruin it.
 
Thaw and refreeze is not recommended. Why not just take a cleaver and make "steaks" out of it while its still frozen? So you have to pick at a few bones when you eat it, I've eaten worse. Besides your kitchen isn't a restaurant. You could just cook it whole, then you got leftovers. Bob
