It is actually quite simple. I believe the owners manual outlines it as well... IT can be doen solo, however 2 persons makes it way easier.
You need to unlock both halves. Open one side and fold it over onto the other half. In the middle of the bed on each side there are some spring loaded pins that hold it into place. Pull these towards the center of the bed and pivot the pin to lock it into place. Repeat on the other side. No go to the remaining latch and press the button to open it and lift it off the bed.
To replace it, I have found it easier to set the cover on there folded in half and latch the front two latches, then release the pins back into the center of the bed and fold it back flat again. Don't do the pins first as you will have a harder time lining up the latches...
