I have a 2001 ST and it came with stock rims. The tires are P255r70 16s. Are they supposed to be 275s and what is the difference?

I think the widest the St came with was 255's...

No, that's the stock size (or one of them anyway). A 275/70 would be both wider and taller. Wouldn't fit without turning up the torsion bars to lift the front end.

I have 275/70 on stock rims sitting at stock height no torsion twist, although I do have 1.25" spacers on the back to widen the stance of the truck.

Ditto what Todd Z and Johnny O said. The stock tires are 235/70 and then they also option 255/70.
