Instead of folding the seats why not cover them. I have 2 medium size dogs that go in the back seat and I would ball like a baby if the leather got messed up. My wife made a 2 sided blanket with straps to go around the headrests of the front and rear seats to hold it in place. One side is fleece to give them some traction on corners and such, and the other side is vinyl for waterproofing. The dogs are the only ones that ride back there but the blanket is removed and installed quickly with buckle clips (she made another with Velcro straps).



At least with the smaller dogs the blanket blocks them from climbing between the front seats and protects the back of the seats. You could shape the material to cover more such as the top of the back seat or perhaps the headrests.



These covers are available commercially but it's cheaper to make and you can customize it.

I have a greyhound also. I leave the rear seat up and got a doggy seat cover from a pet supply catalog. The dog doesn't have to jump as high to get in that way. Although we usually use the wife's minivan to haul the dog(s) I leave the seatcover on the Trac almost all the time since it has the tan cloth seats that get dirty while you watch.
 
I would not let my dog ride in my Trac. it is too nice for a dog- better to let my cats ride in it.



If I had to transport my dog alot, I'd probably buy an old Honda Element with a doggy package:
