need a good chili recipe

I followed the recipe pretty much as written. Only had ground sirloin (not chunked). Also didn't have any taco seasoning, so I used some fajita seasoning instead. Samual Adams Cream Stout for the beer. I put all three kinds of beans in it (had all three kinds, so I dumped 'em all in). Gave it a few shakes of liquid smoke too.



Anyway the crockpot is filled to the brim, and the HOUSE SMELLS SO GOOD!!!

p.s. If you're interested in a very good, very flavorful white chicken chili, let me know (verkuilb at yahoo dot com) and I'll dig it up at home tonight. It's not super-hot (although it would be easy enough for anyone to turn up the heat a bit to their liking), but the flavor, IMHO, is superb.

 
OK- the chilli was GREAT!!!



Next time I make it, I am going to leave out the sage, or maybe cut back on the oregano too. I am also going to add a can of corn to sweeten it up just a hair. The level of heat was perfect, and the veggies were great!

Now the idea of bacon is a good one too- I have had chilli with bacon in the past and like it. However, I am looking for an old recipie I had for something called "Old Settler Beans". It had a lot of bacon, some ground beef, and about 5-6 varieties of beans. It was smokey tasting - kind of a cross between chilli, baked beans, and BBQ. I lost the recipie several years ago but really wish I had it back!

I'm glad you like the chili recipe...and it's easy to adjust the seasonings to your taste. I am a little sceptical about using Fajita seasoning (a marinade with a lot of acid in it) instead of Taco seasoning. Perhaps that's why you thought it needed to be sweetened up. You can buy the packets of McCormick's taco seasoning, but I buy a large container (about 4 cups) of Tone's at Sam's club.



I will also put corn in my chili too, however I am on a diet that recommends I avoid eating high glycemic carbs..and corn is high on that list...but I do love corn.



I agree that bacon would be good in the chili as well, I just think a pound of bacon is way too much fat...perhaps a little bacon and a little liquid smoke.



I also love beans in all kinds of dishes. Have you tired some of the flavored Bush's beans like Smoke House, or Burbon and Brown Sugar, etc. They are a great starting point to add some bacon, etc and really make a great bean dish. Hmmmm, I wonder how those Burbon and Brown Sugar beans would taste in a pot of my Family style chili?? I may just give that a try next week.

I've been having a craving for beans and franks for months! Haven't had them for years.



I'm, thinking about getting some Bush's Smoke House beans and some Hebrew National Beef Franks and some good bacon for this weekend!



(I'm not Jewish, but these are the best hot dogs I have found!)

I agree on the Hebrew National Frank's as the best I have ever had. That's all I buy when I go to the grocery store. I have tasted some at hot dog stands that are very good, but you don't know if they are special made from some secret recipe. Nathan's makes a great hot dog in their hot dog stands/resaurants, but it is not the same Nathan's hot dog that you buy in the grocery store, or they use a different preparation technique.



I must say that I have not had Beans and Franks in a long time myself, and throwing in some bacon, is really starting to sound good to me. I just may do that same thing this weekend and put on some beans and franks.

Your Beans and Franks idea sounded so good I actually made that for dinner last night. It was great.



I used one package of Hebrew National all Beef Franks and 1 can of Bush's Smokehouse and 1 can of Steakhouse Grillin Beans. I also added a dash of catusup, mustard, worchesetershire sauce and a dash of liquid smoke. Wow, that was good! I have plenty of leftovers for a few more meals, but it's hard to buy and cook for one...lol

I made the beans and franks last night too! Was great to warm up with after plowing a couple of driveways out of the 8 inches we just got.



My recipie was similar, but I didn't doctor anything due to being in a hurry. Just put the franks in with 2 cans of Bush's Country beans and them put some Burger's Smokehouse peppered bacon on top and threw it in the oven before going out side.



Yummy!



Here's info on Burger's- a local smoked meat place. Their mail-order is a little pricey, but the products in the stores around here are very reeasonable.
