Reverse Signal for Trailer Surge Brake

Is there an easy way to get the reverse light signal from my 2001ST, along with the std lights wired to the 4 pin flat connector, into a new 5 wire flat connector to mate up with a new boat trailer?

Yup. Splice it off the back up lights. In case you don't know where you can find a back up light, it is the "white" part of your tail lights.
