Coming up on the 60K overhaul. Owners' handbook, check. Now what do you all think they left out, if anything?

Change the axle lube if you want to be picky. Transfer case lube (if a 4x4) should be in the book too, but don't forget. I'd do the spark plugs too only to keep them from getting frozen in there by 100k if you wait until then.
