Ford readily admits to using to using cast magnesium valve covers on the 4.6 3V V-8 instead of the more commonly used thermoplastic covers because of high valve train noise. I think if you get the V-8 you should learn to live with a noisy engine. My engine was replaced for noise problems. New engine is quieter but still is way too noisy.
I had a Z-28 with solid lifters that was much quieter than my 07 ST. Love my ST but hate the engine.
